Crab linguine with chilli, lemon, garlic and parsley
Heat some olive oil in a pan and add to it one finely chopped red chilli, 1 garlic clove and zest of 1 lemon. Once sizzling remove from the heat. Bring a large pan of salted water to the boil and add in 450g of linguine (serves 4). Cook for 8-9 minutes then drain. Put your chilli etc into your pasta pan along with the juice of 1 lemon and once sizzling stir in your linguine along with 250g of white crab meat.
Butterflied Mackerel fillet with a lemon and caper sauce
- Take one good size mackerel per person and have the fish made into a butterfly fillet. To make your dressing mix together a good glug of olive oil, a handful of freshly chopped basil, juice of half a lemon and a tablespoon of chopped capers.
- Heat some olive oil in a pan and add in your fillets (seasoned on both sides with salt and pepper). Cook almost all the way with the skin down then flip over for 1 minute to finish. Place onto a plate and spoon over your dressing.
