Step 1Place your thumbs against the back of the legs and push up to remove the carapace. |

Step 2Push out the mouth and discard along with the stomach sack which sits behind it.
|
|
|
Step 3Scrape out the brown meat in the shell and set aside.
|
|
|
Step 4Remove the "dead mans fingers" from around the carapace.
|
|
|
Step 5Snap off the claws and legs taking care to remove the lib sockets also.
|
|
|
Step 6Pick the white meat out of the body using a pick or handle of a teaspoon.
|
|
|
Step 7Crack the claws and legs with a sharpening steel, claw crackers or the back of a heavy knife and pick out the meat.
|
|
|
Step 8You can then crack the shell along the line underneath and place the meat into the shell.
