How to dress a crab

Step 1

Place your thumbs against the back of the legs and push up to remove the carapace.

Step 2

Push out the mouth and discard along with the stomach sack which sits behind it.

 

Step 3

Scrape out the brown meat in the shell and set aside.

 

Step 4

Remove the "dead mans fingers" from around the carapace.

 

Step 5

Snap off the claws and legs taking care to remove the lib sockets also.

 

Step 6

Pick the white meat out of the body using a pick or handle of a teaspoon.

 

Step 7

Crack the claws and legs with a sharpening steel, claw crackers or the back of a heavy knife and pick out the meat.

 

Step 8

You can then crack the shell along the line underneath and place the meat into the shell.
