How to clean and gut a fish

Step 1Holding the fish by its head scrape the scales of the fish (either using a descaler or with a blunt knife). If you are applying the correct amount of pressure you will see the scales flying off. Strokes should be short and quick working carefully around the fins. |

Step 2Place the fish on a clean surface on its side. Cut where shown in the picture. |

Step 3Insert your knife into the anus near the tail of the fish and cut towards the head. This will split the fish. |

Step 4Spread the fish's abdominal cavity open with your fingers, gently cut away at the insides. |

Step 5Scrape the insides out and rinse the fish ready to be cooked. |
