How to clean and gut a fish

Holding the fish by its head scrape the scales of the fish (either using a descaler or with a blunt knife). If you are applying the correct amount of pressure you will see the scales flying off.

Strokes should be short and quick working carefully around the fins.

Place the fish on a clean surface on its side. Cut where shown in the picture.

Step 3

Insert your knife into the anus near the tail of the fish and cut towards the head.

This will split the fish.

Step 4 of cleaning and gutting a fish

Step 4

Spread the fish's abdominal cavity open with your fingers, gently cut away at the insides.

Step 5 of cleaning and gutting a fish

Step 5

Scrape the insides out and rinse the fish ready to be cooked.
