Ingredients

  • 1tbsp olive oil
  • 1 onion (chopped)
  • 100g chorizo (chopped)
  • 1 tsp ground turmeric
  • 300g long grain rice
  • 1 litre fish stock
  • 100g forzen peas
  • 400g mixed seafood (defrosted)

Lemon wedges to garnish

  1. Heat oil, add onion and soften for 5 mins without browning. Add chorizo and fry gently for a few mins. Stir in turmeric and rice, coat with the oils, pour in stock. Boil for 5 mins, stir occassionally.
  2. Add frozen peas, cook for 5 mins, stir in mixed seafood and heat through for a couple of mins.
  3. Check rice is cooked, season.
  4. Serve with lemon wedges
