One from the cupboard
Ingredients
- 1tbsp olive oil
- 1 onion (chopped)
- 100g chorizo (chopped)
- 1 tsp ground turmeric
- 300g long grain rice
- 1 litre fish stock
- 100g forzen peas
- 400g mixed seafood (defrosted)
Lemon wedges to garnish
- Heat oil, add onion and soften for 5 mins without browning. Add chorizo and fry gently for a few mins. Stir in turmeric and rice, coat with the oils, pour in stock. Boil for 5 mins, stir occassionally.
- Add frozen peas, cook for 5 mins, stir in mixed seafood and heat through for a couple of mins.
- Check rice is cooked, season.
- Serve with lemon wedges
